Turkey Tenderloins and Apricot Sauce

1 pkg (1 1/4 lb. turkey tenderloins (2 tenders)
1/4 tsp each salt and pepper
Apricot Sauce:
2/3 cup apricot preserves
2 cloves garlic, minced
2 TBSP Dijon mustard
2 TBSP soy sauce


Heat oven to 400.
Season turkey tenderloins with salt and pepper; place in a roasting pan lined with foil and coated with nonstick spray.
In a small bowl, combine sauce ingredients. Mix well, spoon some over turkey. Roast 35-40 minutes, basting frequently with the sauce, until an instant read thermometer inserted into the thickest part registers at least 160 degrees.
Let turkey rest 10 minutes before cutting it crosswise into 1/2 inch thick slices.
